    A young and dynamic company born from tradition, experience, and a love for Sicily and its riches,  but projected towards the future with a continuous search for new solutions.    

Using the richness of products to elaborate new ideas for a modern cuisine, offering ever-new perspectives and uses.
The goal of our company is the research, transformation, production, packaging, and marketing of the main products of the Sicilian territory and in particular of the south-eastern part of Sicily.
Starting with tomatoes and more.
Our passion for research is fundamental and has remained unchanged.

Andrea: the present and the future

An unthinkable journey, from literature to tomatoes, was made by Eugenio Picchi, a Tuscan from Pontedera.
Head of a research department at the National Research Council, specializing in computational linguistics (and here we start with the fancy words: it's the discipline that deals with text analysis and getting the computer to automatically understand the meaning of words within a sentence or text), Eugenio was, among other things, the co-author of a collection of 1000 works of Italian literature on CD Rom and now, quoting the article by Paolo Massobrio in the magazine The Cuisine Press "happy producer of equally brilliant  products of Sicilian agri-food with his company PachinEat, in Pachino, Sicily." 
Donna Enrica took on the task of keeping this extraordinary and quirky enterprise going, supporting and enduring the two males of the family.
She recounts: "The adventure began with a holiday in Pachino in 1997. In 2000, we bought a house, as outsiders. In the summer, when the tomatoes were ripe and could no longer be harvested for sale, we locals would buy them and, for a few days in all families, we would make sauce. We can't share the fun and  joy of the days we prepared the sauce, but the taste, genuineness, and quality we offer are the same."
Driven by his parents' enthusiasm, Andrea became passionate about this project to which he contributed his skills as an experimenter, his rationality, and his pragmatism.
In fact, he found the simple, fast, and mechanical method of extracting water from the tomato. He is responsible for all the graphic design and packaging of PachinEat, and his is the energy and stubbornness in carrying this project forward.

The richness of PachinEat

The sun, the wind, the meeting of two seas, tradition: a magical recipe for quality products.
The particular microclimate that identifies the Pachino area is characterized by the benefit of two seas  -the Ionian and the Mediterranean Sea-, by the winds that beat the coast and the territory with force, by the amount of  solar radiation that exceeds that of any other part of Italy, and by the groundwater with significant brackish content.  These characteristics give the products of the land, and tomatoes in particular, an unreachable richness and quality.
The tomato is the main product of this territory.

Overview of PachinEat products

PachinEat offers its own production of processed tomatoes but not only: pure passata, hand-peeled tomatoes, cherry tomatoes in tomato water, tomato water, and even tomato powder, citrus powders, caper powders, beet powders, and candied tomatoes, olives, capers, and peppers. The types of tomatoes that this part of Sicily offers us that constitute the heart of PachinEat's production are:

Cherry Tomato
Cherry Tomato Sweet and balanced, the cherry tomato is enhanced with light and fast cooking. It has a "cherry" appearance on a herringbone cluster, a brilliant color, and a high brix degree (sugar content).

Date tomatoes
Date Tomato With a strong and intense flavor, it can also be enjoyed as a fruit. The cluster is shaped like a fishbone and features 10 to 15 small tomatoes of about 30 grams each. It can reach 12 brix.
Marinda tomatoes
Marinda tomato A winter tomato with a sweet, enveloping, juicy, persistent, flavorful taste. Recommended in salads for its firm, crunchy, and compact texture. Its weight is 100-150 grams. It can reach 12 brix.

Pixel Tomatoes
Piccadilly and Pixel Tomatoes Small tomatoes that grow in clusters of 8-12 fruits, weighing 30-50 grams each. These tomatoes are excellent for preparing sauces.
