Antiqua – Hand‑peeled Marinda tomatoes

A unique and exceptional product, obtained from a ribbed salad tomato that in Pachino reaches full ripeness from January to June.
The thermal stress caused by the temperature variation between day and night makes it crisp and particularly sweet.
The peeling is done at the end of the production, between May and June, when the plant—now stressed—offers its sweetest
and ripest fruits.
At the end of the production, we let the tomato ripen naturally on the plant, depriving it of water so as to enhance its
natural concentration of flavors.
Perfect for those who love a bold and intense tomato taste. Suitable for pizzas, ragù, stews and braises, but also for simple
sauces with a vigorous taste. In the latter case a short cooking time is recommended to keep aroma and flavor intact.
It also pairs perfectly with fish and shines in soups.
